You do not need an override; field configuration or placeholder configuration—depending on where you wish to format the output—will suffice.
Re: date output display
This depends on where you want to format the output.
There are two distinct cases to consider.
Case 1: Forms and Data Views
In this context, the choice of formatting options is limited to the specific settings available within the field configuration for the date field.

Case 2: Visforms Placeholders (e.g., in Result Text, Email Templates, or PDF Templates)
