We have not created any overrides, Aicha.

Is there some kind of workaround we could use?

Hi,

this is not a bug or error in Visforms but a problem of the configuration of your website (including all extensions you have installed, your template....) So, sorry, but no there is not just a workaround but you have to figure out, where the misconfiguration comes from. (Well maybe you can restore a backup of the website before you updated visforms and test the update on a local system then first until you found the problem).

if the submit button is not working, this is usually the result of a javascript error. The question is, where this error comes from. When I try to found out, where a javascript error comes from I strip down the problem piece by piece. Use the Joomla! default template protostar for starters. Then unpublish the modules... and hopefully at some point the form will start to work again. Then you know, where to incompatiblity comes from and can try to figure a solution.
